The rosé is an elegant champagne – both cheerful and subtle.
It is prized for its distinctive color, ranging from delicate pink and peach hues to deep purple,as well as for its fruity aromas. It is primarily made from dark grapes such as Pinot Noir and Meunier, although Chardonnay may also be used. The pink color is achieved through the maceration of the skins of dark grapes in the must – a technique that distinguishes rosé Champagne from other Champagne varieties.
There are two manufacturing processes:
The assemblage : In this method, musts from white and dark grapes are blended with a small amount of red wine (between 5 and 15%) to achieve the characteristic rosé color.
Rosé de Saignée : Here, the contact time between the skins of the dark grapes and the must (from a few hours to 24 hours) is controlled. This gives the Champagne an intense rosé color and more pronounced, vinous aromas.
