Champagne Brut Original

Maurice Delabaye et Fils

Champagne Brut Original

“Delabaye's Brut Original is much more than a Coup de Cœur: it is the champagne of our wedding.”

My family and I have been drinking it for more than 20 years, since before I even met my husband, Torben. The first bottle we ever drank together was this one, and naturally it was this champagne that accompanied our wedding. Since then, it has been part of every big and small moment at Quast Collection. It is probably the one we have introduced to the greatest number of friends, acquaintances and partners.

It brings together the three great grape varieties of Champagne in a wonderful blend: 40% Pinot Noir, 40% Meunier and 20% Chardonnay. The result is very round, very balanced and quite lively. It is a young champagne, aged just two and a half years on the lees, yet its freshness and aromatic profile are truly delicious.

It is the least expensive champagne in our selection and offers excellent value for money: it has nothing to envy the big brands, which cost more. So it was only natural that it should be one of our Coups de Cœur.

Champagne Cuvée Grande Réserve - Extra Brut - Premier Cru

Dauby Mère & Fille

Champagne Cuvée Grande Réserve - Extra Brut - Premier Cru

“At Dauby Mère & Fille, our Coup de Cœur is the Cuvée Grande Réserve Extra Brut: a magnificent, extraordinarily round champagne, and one of my favourites.”

It blends 60% Pinot Noir and 40% Chardonnay, the two emblematic grapes of the Dauby family, who grow no Meunier. The house is based in Aÿ, in the heart of the Vallée de la Marne.

The Grande Réserve ages 6 years on the lees. The autolysis is very pronounced, giving it a very brioche-like, very round taste, full of delicacy.

Champagne Blanc de Blancs

Thuillier & Filles

Champagne Blanc de Blancs

“At Thuillier, our Coup de Cœur is the Blanc de Blancs Cuvée Délicate. And this too was a discovery.”

I'm not a big fan of Chardonnay. Over time I realised that I prefer roundness, notes of honey, apricot and candied fruit. I'm less keen on the very 'spritzig' side of Chardonnay, as the Germans say: very direct, with apple and white flowers.

We tasted this Blanc de Blancs at Claudette Thuillier's in late August 2025, before the harvest, I believe. I thought: 'I don't really like Blanc de Blancs, but I'll give it a try.' What completely won us over was its roundness: it is much easier to drink, far less 'straight and crisp' than most of the Blancs de Blancs I had tasted.

It is a question of style and soil. The estate is in Beaunay, right between the Côte des Blancs and the Coteaux du Petit Morin, on soil that is no longer chalk but clay-limestone. Claudette Thuillier also practises malolactic fermentation. As a result, her Blanc de Blancs is much creamier than those made without it, which are very crystalline and very direct, with white fruit and apple.

For me, it was obvious: at Thuillier, the Blanc de Blancs had to be the Coup de Cœur.

Champagne Rive Gauche

Maison Gamet

Champagne Rive Gauche

“At Maison Gamet, our Coup de Cœur is the Rive Gauche Extra Brut, a Meunier-led blend – Meunier being my favourite grape in Champagne.”

We discovered this house about a year ago, before launching our company, in Mardeuil, in the heart of the Vallée de la Marne, where we met Madame Gamet, the winemaker. As most of their plots are planted with Meunier, it is thanks to them that I truly got to know this grape, which I knew little about before.

Rive Gauche blends 55% Meunier, 30% Pinot Noir and 15% Chardonnay. The Meunier gives it all its roundness, a soft, apricot-like character and aromas of candied fruit. Such a high proportion of Meunier is unusual in a blended cuvée, where Pinot Noir or Chardonnay usually dominate. That is what makes it my Coup de Cœur.

This cuvée is beautiful right down to its bottle, which shows the Marne in blue. Rive Gauche refers to the left bank of the Marne, Rive Droite to the right bank. Side by side, the two bottles create a lovely visual effect.

Lejour, Champagne Rosé Premier Cru

Laurianne Lejour

Lejour, Champagne Rosé Premier Cru

“At Laurianne Lejour, my Coup de Cœur is the Rosé Premier Cru – quite simply a marvel.”

Laurianne is the grower in our collection with the smallest vineyard: just 1.5 hectares. Her production is very limited, but her plots lie in the heart of the Montagne de Reims.

Tasting this rosé feels like stepping into a rose garden in the early morning. That is how our sommelier described this champagne, and the image suits it perfectly. It is a rosé that surprises. Extra Brut, with a dosage of 3 to 4 g/L, it lets the full strength of the terroir shine through. Its blend of 53% Pinot Noir and 47% Chardonnay makes it very balanced. Made without malolactic fermentation, it is very direct, fresher and more crystalline than many other rosés I have tasted: the pure expression of its terroir.

It was with this rosé that Laurianne Lejour won the young winegrowers' competition in 2021, and it is also featured in the Gault & Millau – Champagner Edition 2026. A truly wonderful discovery.

Voirin-Jumel, Champagne Cramant - Grand Cru Blanc de Blancs

Voirin-Jumel

Voirin-Jumel, Champagne Cramant - Grand Cru Blanc de Blancs

“My Coup de Cœur from Voirin-Jumel is the Cramant Grand Cru Blanc de Blancs: a 100% Chardonnay champagne, very pure and very exclusive, that captures all the beauty and richness of the Cramant terroir.”

Voirin-Jumel is the 7th grower to join our collection. Behind the name are two winemakers: Pauline, who tends the vines, and Julie, who runs the commercial side. We met them in April and were won over immediately.

First by their village. Cramant is the emblematic village of the Côte des Blancs. The growers taught us that there is an 'ABC' of Champagne: A for Aÿ (Vallée de la Marne), B for Bouzy (Montagne de Reims), C for Cramant (Côte des Blancs) – three villages classified Grand Cru.

Then by their approach. These two dynamic young women took over the estate, previously run by their father, and modernised it with an approach deeply rooted in the terroir. They have mapped every one of their plots to understand, plot by plot, the nature of each soil and draw out exactly the best from it. Compared with everything I have seen so far in the world of champagne, this work makes them unique.

Their Cramant, aged 5 to 6 years on the lees, is its finest expression.

Billecart-Salmon, Champagne Le Rosé

Billecart-Salmon

Billecart-Salmon, Champagne Le Rosé

“At Billecart-Salmon, the choice was obvious: Le Rosé. It is the house's best-known cuvée, the one that made its name around the world, and its emblematic bottle.”

This rosé champagne is remarkably elegant and refined, with extremely fine bubbles. Beautifully balanced, it is nonetheless Extra Brut: something very pure.
